This is going to make my Colombian husband very happy! Do you have any recipes for ajiaco and/or arepas? I am always looking for good ones.

  • nika says:

Yeah, I have not uploaded my arepas series yet but its just sitting on my drive waiting for some free time.

I am working on publishing a whole series of how-to books on colombian food in the near future so stay tuned for that! (bookmark the blog so you dont lose it).

I will ask my mom about ajiaco. I remember now eating this (and its yummm) but I have not made it myself. She will have a recipe for it for sure!

Hello Nika… I came through ‘101 cookbooks’ site. I liked your presentation of recipe very much. and photos are breathtaking, just gorgeous.
I also need a help, could you please tell me how you did the flickr slideshow on your site? I’d greatly appreciate if you could guide me how to do it, like what code to use etc., I’ve a flickr account already.
    Thanks somuch.

  • nika says:

Indira: Definitely! It might be best if I sent it to your email address which I can not find at your beautiful site!

If I cut and paste here it would launch the slideshow and not let us share the html.

just email me at nika7k at yahoo dot com and I will reply with the code.

  • Indira says:

Nika, thank you so much for the prompt reply. I’ve just sent you an email.

Indira: Yep, just got it and I have sent you the code, enjoy! Make sure to let me know if you have any problems!

My husband is Colombian and I am a very good cook. And I have made Empanadas from my “Taste of Colombia” cookbook. However, in this cookbook, they make the dough from real corn – takes way too much time! Didn’t even go there! I finally just started using Goya corn meal to make my dough. I have seen many pictures and recipes of Colombian Empanada recipes. None come as close to the real empanadas, as your complete recipe does. Especially the dough!! I knew it had to be made with some kind of yellow corn dough. I use Goya’s Masarepa (Yellow Corn Meal) precooked or Goya’s Harina de Maiz (Fine Yellow Corn Meal). I make a lot of Empanadas at once and individually freeze them on a cookie sheet and then Food Saver seal them for later consumption. I always deep fry them straight from the freezer.

Thank you for your recipe of the dough. Very authentic and looks just like Empanadas we buy at the Colombian restaurant we go too.

While I bet it tastes amazing to have empanadas or arepas made from fresh masa, that would be definitely quite a project! (need to soak in lime, grind, etc)

I am glad this post helped out!
