		<description>While I bet it tastes amazing to have empanadas or arepas made from fresh masa, that would be definitely quite a project! (need to soak in lime, grind, etc)

		<description>My husband is Colombian and I am a very good cook. And I have made Empanadas from my &quot;Taste of Colombia&quot; cookbook.   However, in this cookbook, they make the dough from real corn - takes way too much time!  Didn&#039;t even go there!   I finally just started using Goya corn meal to make my dough.  I have seen many pictures and recipes of Colombian Empanada recipes.  None come as close to the real empanadas, as your complete recipe does.  Especially the dough!!  I knew it had to be made with some kind of yellow corn dough.  I use Goya&#039;s Masarepa (Yellow Corn Meal) precooked or Goya&#039;s Harina de Maiz (Fine Yellow Corn Meal).  I make a lot of Empanadas at once and individually freeze them on a cookie sheet and then Food Saver seal them for later consumption.  I always deep fry them straight from the freezer.

Thank you for your recipe of the dough.  Very authentic and looks just like Empanadas we buy at the Colombian restaurant we go too.</description>
