Organic Black Soybean Pasta - gluten free

April 5th, 2007 · 2 Comments

What you see here is 100% organic pasta made from black soybeans, a product of a company called Nutrition Kitchen. I picked up my pack at The Living Earth in Worcester, MA, when I was doing my organic shopping. I got it because I wanted to try something new.

Since it is made from one ingredient, namely black soybeans, it is gluten and wheat free.

I served it to the family for lunch yesterday with some hamburger in Muir Glen organic pasta sauce and basil. You can see below that I serve it in a way that is very different than for photography!

It got two thumbs up (husband and toddler), one “eh” (me), and one thumbs down (older child).

I would say that this pasta is where whole wheat pasta was a few years ago: doesn’t approximate regular semolina pasta in terms of the way it cooks up, texture, or flavor. My main issue was that it had too dominant a flavor, overwhelming the rest of the dish. It is also like whole wheat in that it seems to want more salt to taste “right.” I can not explain that other than to say that is not a good thing. I boiled it in salty water like I do regular pasta. I would not want to add any more!

I think we will stick to the much improved whole wheat pastas they have now. I am not a pasta lover by any stretch of the imagination but the whole wheat pasta these days is so rich in an appealing flavor that I look forward to making it.

Interesting, thanks for sharing your impressions of it. I love the Glen Muir pasta sauce when you don’t have time to make it from scratch. It’s low in sugar too.

Kalyn: Yeah, the Muir Glen stuff is tasty.. nice to know its low in sugar. I would say still give this pasta a try if you are an adventurous pasta person. In terms of sugars one serving (1/4 of the package - thats a lot) ia 22g Carb - 22g dietary fiber and 3 g sugars — not sure where the rest of the carbs come from!

The GREAT thing about this pasta is the protein - 23gs for that serving. 210 cals too. 0 chol, 5 mg salt, 2.5g fat no sat fat.
