Excellent biscuits and good job tagging with the whole wheat pastry flour. I bought a bunch a couple of months ago on sale and needed to use it. It being a breakfast at dinner night, we also needed biscuits. Your blog, serendipitously found and tasty flaky success!
We managed to have leftovers and they were quite good the next day.

April:

Awesome that you all enjoyed these!

I do not have a nifty mixer but I bet it sure does make this come together in a snap!

I will look into the palm shortening, thanks!

Hi, Nika. I've never been to your site before. I did a search for "biscuits" and "whole wheat pastry flour" and found this recipe. I made them this morning for a nice Sunday breakfast and they were delicious! This is about the 4th recipe I've tried for making healthier biscuits and it's the first one that me and my family actually liked! I just wanted to say thank you for the great recipe. :o)

BTW, I realized one batch wasn't enough so I made up a second batch using Palm Shortening (really great stuff if you've never tried it). They came out just as good as the butter ones. Oh and I was short on time so I used the mixer w/dough hooks to blend the dough and it worked great.

Thanks again!

Lisa: thanks! Yeah I do use the KA whole wheat (not sure if I have tried the white whole wheat) but I wanted to try out my whole wheat pastry flour and it seems to work great.

The Bob's Red Mill whole wheat pastry flour is extremely fine in texture and not hard to use at all. Get it and experiment.

I have some Red Mill rye flour that I have been meaning to try out.. just have to decide what I want to make with it.

I cant remember if I have tried making whole wheat tortillas.. I do know that I am sorta picky about the texture.. the storebought ones can get sorta funky .. like too stretchy or gummy, hard to put it in words.

Nika, these look beautiful! Do you ever use King Arthur's White Whole Wheat? I've been baking with it a lot lately and even used it by itself for one batch of flour tortillas. While not quite as supple if I'd used half white flour, they were still much softer than if I'd used only regular whole wheat. I love it. What's Bob's Red Mill Organic Pastry Flour like?

And you're sooooooo spot on about Popeye's biscuits. I could eat a whole bag!
