Kim,

Goodness! You need to try some! Especially the brisket. We are going by today to see if they have any of the smoked salmon (sighs - so SO delicious)

I had been planning to visit B.T.'s ever since he beat me out of "People's Choice" chili at the New England regional chili cook-off in May of 2008. The brisket that he adds really put his chili over the top. Everyone there who knows Brian raved about his Brisket. So, armed with my new Garmin GPS, (Thanks, honey for my Christmas gift!) I made the 40 min. trek for barbecue. I was not disapointed. The meats were some of the best that I have tasted. His rubs are subtle, yet sweet and flavorful as they work their magic down to the bone. Three sauces, all mild and packed with flavor, are superbe. The rolls, baked fresh locally, were to my liking, firm enough to hold the sauce, but light enough to let the flavor of meat shine through. Pork Ribs were just what you would expect. Awesome! There are 4 sides. Cornbread is sweet and moist, Potato salad is good, but the slaw was a bit too spicy, with vinager holding sway, as I like the cool refreshment of a more traditional style. Beans need work but hey, I can make the sides myself! The meat is king! Brian gave me a taste of the ham. Wow! I am disapointed that I never tried the chicken, but you know, it tastes like chicken! I won't need my GPS (Since my wife seems to be in possession of it anyway.) My taste buds know the way!

Brian,
I don't know whether are you interested or not, but I'm from Harrisburg, IL. I was born there and raised there. When I was in high school (1956-1960) several of us went to Ray's bbq for lunch, off and on for several years. I knew Ray from eating there, and he always seemed delighted to see us come in from school at noon. I since then have had a career in Northern IL for 40 years and have retired. For all these years have missed Ray's hot bbq sauce. I was just looking on the internet again to see whether I could find out what happened to his restaurant. I've wanted to find someone there that knew what his bbq's were like. I know this is asking a lot, but I am 65 now and promise not to start up a bbq restaurant. Is there anyway I could get Ray's bbq sauce recipe, so I could tasted it again? Thank you for your time.
