Today’s post is going to have multiple personalities. I am going to cover three main topics:

Low Glycemic cooking and why I care

As a general rule, I respect everyone’s right to their own eating styles. I care that people eat the way they need to and I am no one to nit-pick others for that. My story that follows is like many of you. I can not say I have any answers and I am not an expert. I am sharing this story so that you can understand how I got into my current predicament - I am pre-diabetic, according to my doctor.
